A 5-month old cafe owned by Head Chef Sutinee and her partner, Humble Rays is a fun and quirky cafe that brings to life Sutinee’s extensive experience in the hospitality industry coupled with a humble vibe that will bring out the inner child in all of us.
Walking through the automatic sliding doors, the bright yellow-green-blue hues displayed through modern artwork and colourful design are complimented by natural greenery strategically positioned throughout the venue. Even on a weekday morning, the cafe is buzzing with friends catching up for brunch, solo diners working on laptops, and business meetings between men in suits.
Sutinee’s love for all things sweet is shown on the two-sided menu, with one whole side dedicated to sweet dishes, including some unique sweet-and-savoury combinations. Coffee is supplied by Axil Coffee Roasters, with the availability of Soda Pops and Cold Pressed Juices showcasing their acceptance of all things exuberant and individual.
Hojicha Latte ($5.00)
Some of their lighter options on their savoury menu feature a Panna Cotta Granola (mixed seeds and nuts, saffron honey pannacotta, seasonal berries, cardamom custard, Persian fairy floss) ($14.50) and the Oh My Goodness (coconut chia pudding, seasonal fruits and berries, passionfruit coulis, coconut ice cream, shaved white chocolate, dessert dukkah) ($14.50), both of which (I have been told) will satiate your hunger without leaving you feeling heavy.
Seeking a healthy option that looks appetisingly generous, the Egg White & Bacon features a folded crispy egg white sitting atop multigrain rice, garnished with grilled bacon, Edamame beans, chilli, fresh tomatoes, coriander, spring onion, fried shallots, dark soy and chilli mayo. The egg white omelette is cooked to crispy perfection on the outside, whilst remaining fluffy on the inside, with the quality of care put into the dishes demonstrated by the complete lack of egg yolk in the white omelette. A genuinely healthy and light dish, the addition of crispy grilled bacon and multigrain rice add both hearty and moreish components, completing this well-thought-out dish.

A sinfully right choice, the Sticky Brisket Beef arrives in a brioche bun, filled with slow cooked sticky beef brisket, stout onion chutney, cheddar cheese, sauteed mushrooms, dukkah and a smoked chilli bacon jam. Add a fried egg in there, and you have the ideal hangover brunch. The sticky-sweet stout onion chutney perfectly compliments the rich shredded beef brisket, with the right amount of melted cheese to add a sharpness of flavour to cut through the rich ingredients.

Moving onto the sweets… the Puffle Waffle is a Hong Kong egg waffle topped with a salted egg custard sauce, coconut ice cream, peanut praline, black sesame crumbs, sea salt caramel sauce and shaved white chocolate. The crunchy texture and intriguing flavours of the black sesame crumbs and peanut praline pair extremely well with the creamy coconut ice cream and fluffy-yet-crispy egg waffle. Generously served and carefully plated, this is one dish you should order if you appreciate Asian fusion flavours in a contemporary dish.
Puffle Waffle ($16.50)
If you’re visiting Humble Rays, you can’t leave without trying one of their Skookie’s. Essentially a cake-cookie mixture cooked in a skillet, they offer Classic, Red Velvet and Green Tea options. Being a chocolate lover through and through, it was a no-brainer I’d choose the Classic Skookie.
Gooey chocolate chip cookie forms the base inside the miniature skillet, topped with house made marshmallow, chocolate sauce, almond crumble, chocolate ice cream and chocolate shavings. The fluffiness of the marshmallow lightens the heavy chocolate flavours underneath, producing an extremely moreish and droolworthy dessert, the likes of which you have never seen or tasted elsewhere. The only thing that could make this dessert better: more ice cream, and more chocolate skookie underneath.
Classic Skookie ($12.50)
This was my first visit to Humble Rays, but I can assure you that it won’t be my last. With such an exciting variety of both sweet and savoury food on the menu, you will want to return to try multiple dishes. Staff are super friendly and unpretentious, cracking a joke and a smile regardless of what weird or whacky requests you may have for your coffee or matcha latte. The light-hearted ambience and colourful decor is the perfect accompaniment to their vibrant and delicious food… all of which can’t help but make you smile.
